Ham Salad




Growing up I remember Ham Salad! Every holiday that ham was involved was followed the next morning with ham, eggs, and potatoes for breakfast. During breakfast on the stove cooking was Hamhock and beans or Menudo. These two things I would not touch!! After breakfast while we would clean up that mess G-pa was busy making Ham Salad. 

I had forgotten about ham salad until a few years ago when Chris and I went to Heavenly Ham for lunch and they have - oh my!- Ham Salad. It was like a rush of memories came over me! Then, I tried it! IT was okay, not like G-pa used to make!! 

Last year I decided to buy a ninja. Why? To make Ham salad, Chicken Salad, and so much more! I could not wait to test out my new ninja on this childhood memory! 

This past week I broke out the ninja again to  make Ham Salad and this  has to be my favorite recipe so far! 

1 packaged of sliced ham a big chunk - not the deli slice but one in the meat section. I believe it is called smoked ham. Or you can use left over spiral ham, or any ham 
1 package  (8oz) pepperjack cheese shredded
Mayo - to taste I use maybe 3 spoonfuls
Celery - to taste I use 2 stalks
Pepper - to taste
Dill Relish with juices- to taste I use about 2 spoonfuls
Onion (optional, I don't use it)

So I add a couple pieces of ham in the Ninja at a time, too many pieces you end up with ham pudding or mush. Only add maybe 4 or 5 slices. Chop for a few seconds and dump into bowl. You can always dice all the meat if you do not have a food processor. May take awhile but it does work. 
After all the ham is chopped and in the bowl add the mayo, relish, pepper, and mix, add to ham.
Add celery and onion to processor, this makes them tiny pieces which is good for those who do not like adding this. add to ham and mix up just til blended. If you overmix it becomes mushy.
Mix in the shredded cheese and stick in the frig. Because ham is so salty no need to add any extra  salt.
Taste and alter whatever you think
Serve on croissants, sub rolls, or regular bread. 

Our family loves ham salad - well most of us do!!
